Is this enough food variety for a desert reception?

i went to my caterer today %26amp; she keeps giving me different answers, then i saw pictures of some of the events she'd catered %26amp; let's say i was so not impressed, then when she said she'd never done a wedding before, i just canceled her. i live in a rural area so there is no other caterer around here.



but since it's a desert reception mom said we could make it, i don't work, i have taken culinary arts %26amp; catering classes in the past, my mom, my aunt %26amp; my mom's best friend said they'd help too so this is what i have on the menu



lemon squares

mini strawberry cheesecakes

cookies

belgian mini cream puffs

mini eclairs

mini turtle cheesecake

chocolate brownies truffles

cupcakes (instead of cake)

gourmet brownies



with milk, desert wine, champagne, water %26amp; coffee to drink



what do you think? does that work out or do i need more variety,



milk is mainly for the 8 kids that will be there, the adults attending don't drink pop, they are big coffee drinkers, my parents only drink water, his parents only drink wine %26amp; coffee, so we don't really need soda, beer isn't a good idea, his brother drinks beer like water.

Something else you might enjoy are oreo truffles. Those things are so good, and (depending on size) they can garnish 70-140 little truffles. You can drizzle the chocolate to make them gourmet-ish too. They're always a hit anywhere I go and take them.

and don't worry about the spelling, I get them mixed up too at times LoL(Sometimes I just say sweets/pastry bar:) We're all human and have a few flubs ^_~

i typically have around 15 different items on a desert buffet. you should consider adding some candies perhaps. also, see if you can buy some of these items. they probably wont' be as expensive as you expect and also will save you time and effort during an already stressful time. check with local bakeries or pastry shops. that way, all you'll have to do is have someone pickup and set up the display
you're planning on 4 of each item for each guest? I think that will be sufficient.



Make sure you stash the cupcakes until the 'cake cutting' deal (if you're doing the 'feed me' thing)



Figure out what you can make in advance and freeze/refrigerate... you will have so much on your mind, make sure you delegate!

Just another idea... Im doing a dessert only reception as well and we are also renting an ice cream cart! The places we have found charge around $100 and it comes filled with the ice cream bars of your choice. I really thought this was a great way to round off our sweets only menue. We also added fresh fruit for the dieters. lol
That sounds perfect.... how about adding some chocolate covered strawberries!!



Uh, you could rent a fountain (or buy one from like Kmart, a small one) and have some strawberries and some jumbo marshmallows surrounding the fountain of chocolate... how beautiful!!! and yummy!!
That sounds like a good variety. I would plan for more than 4 different things for each person though. Many will eat four and others will eat more. You can always find a place for the food that is left.

My favorite thing to have with dessert is hot tea, but I don't know if you have any tea drinkers in your crowd. Doesn't seem to be very popular in the US, everyone is into coffee.

I think that's a really good variety. Maybe have a sugar free option for some of the diabetes. A chocolate fountain would be cool too.

Sounds good to me. Have lots of milk b/c even as an adult the best thing after chocolate is milk! Maybe have tea for those tea-drinkers and some kind of juice/pop

Have a little variety of wine. You said dessert wine? Perfect but be sure to have a decent red and white available for those who enjoy it. Also...since you won't have soda, how about iced tea? Some people won't want wine and some don't want coffee. Iced tea is a nice alternative.

The selection of treats is perfect but add in a large fruit tray. Think about those watching their waistline or possibly have an allergy to items made with eggs, sugar, etc...

You could include melted chocolate in small ceramic pots over tea lights to keep it warm and possibly another fruit dip made with yogurt, honey and toasted coconut.

Have small plates available and plenty of toothpicks/skewers ready for people to pick.
That is a good selection, but the question now becomes amount. You don't want to risk the dessert that everyone loves running out after the first 10 people. I would actually have fewer of the different options - having both cream puffs and eclairs seems redundant, as with having both brownies and the chocolate brownies truffles.



If you're serving small pieces, which is what this sounds like from the number of squares listed, then you want to assume that each guest will have 2-4 squares. Double that for young men, or really young children who will just love the sweets you're making. Make sure you have more than that total amount, because no one wants to feel that they're taking the last piece.



If any of those are going to be a real big hit, try to have 1.5- 2 of them per person who can eat them. i.e. everyone really loves your brownies, you're inviting 100 people, and 10 of them are allergic to the nuts you put in the brownies. At that point you want to have 135 - 180 brownies. They can be small (make 90 and cut them in half), but this way everyone will get one of them.
i would also do a punch type drink



do you have a sams club? if so get there pastries or go to a local bakery or store bakery



sams has mini assorted cheesecakes a box of like 80pc for 14.99

they also have the cream puffs and mini eclairs



i would do doughnut holes ( get them at a dunken dougnuts and assort them on a plate)



fudge all diffrent kinds you can make them the day before and cut them the day of





i would do a cookie basket and a brownie basket with diffrent kinds of each



also if you can i would do some icecream to go with some of the desserts also look into mini pies



magic bars, lemon bars, things in that nature they can be done a day or two in advance and hold well



also a chocolate fountain



you can get a bunch of diffrent types of cake and have people dip it in the fountain also some fresh fruits too
